Zesty Seafood Stew

I think limes are my new favourite citrus fruit…sorry lemon. They give this dish real zing. Note: For the seafood, feel free to omit or substitute based on your preference (I like squid in mine).

Ingredients
  • 1 pound raw peeled shrimp
  • 2 cups bay scallops
  • 2 sweet red peppers (seeded)
  • 1 jalapeño pepper (seeded)
  • 1 large red onion
  • 2 medium tomatoes
  • 1 cup chopped cilantro
  • 3 limes
  • 4 cloves garlic
  • 1 quarter cup olive oil
  • 1 quarter cup butter
  • salt and pepper to taste
Directions

Rinse seafood, combine with the juice of the limes and set aside. Finely chop red peppers, jalapeño, onion, tomatoes and garlic. Heat olive oil and half of the butter in a large saucepan. Sautée onions and peppers on high heat until onions are translucent. Reduce heat and add tomatoes, garlic, salt and pepper. Continue cooking until mixture is soft. Add seafood (with juice) and simmer until shrimp are no longer grey and liquid has reduced. Add remaining butter and cook until thickened. Stir in cilantro at the very end. Serve over basmati rice with lime wedges.
